Troika’s Cocktail Workshop with Rohan Carvalho

Recently we were invited to the new, airy and fresh terrace lounge in Bangalore which is the Troika lounge on 100 feet road in Indiranagar just next to Starbucks. It promised a perfect blend of spirits, food, and an open sky. There was protection from too much wind and rain though due to a canopy so we were not worried about the same. It was time for us to indulge our senses in an extensive array of beverages and an exquisite spread of global cuisines ranging from Coastal to Oriental to Mediterranean, along with a live interactive kitchen.

One interesting activity was lined up for us. It was a cocktail making workshop with one of the best bartenders in India – Rohan Caravalho of Bar Square. Having known Rohan for more than 2 years now, we knew it was an amazing session which lay ahead of us as he mixes anecdotes with tips on how to make the best cocktails and drinks for parties. My friend Nivedith and I were one of the first to start making the cocktails which was the Azure Twist.

How to make it? Here is the method – Put four cubes of ice in a tall glass. Pour lime juice,Hawaiian Blue, and vodka in it. Top it up with lemonade. Use a Pilsner or any tall glass and garnish the drink with pineapple cone and cherry.

Some other cocktails that people made that day were Bell Pepper Daiquiri, Awesome Threesome, Caipiroska, Whisky Sour and Sangria. Rohan’s master class was very simple to follow and we could enjoy the process of making our favorite cocktails without any issues. We learnt some tips and tricks like how to taste the cocktail after making it. There were a lot of interesting flare bartending and other tricks which Rohan showed us later.

Later we started on the gastronomical journey of the coastal, oriental and Mediterranean cuisine at Troika. One of my favorite Non-Vegetarian starters was Chicken Fa Fa which is crisp chicken tossed with aromatic oriental spices. This was a perfect Mediterranean dish which was perfected at Troika. I really loved the taste and flavor of this dish.

In main course, I liked King Fish Darne Kodampulli, Coconut and Spinach Rice. This was King fish roundels with the center bone simmered in a curry made with Kerala kodampulli and served with coconut and spinach rice. Konkan style Chicken Pulimunchi with Ghee Roast Dosa was also amazing as I just love the coastal cuisine very much! This was Chicken morsels cooked in a thick tomato and onion masala with the right amount of spices to jazz it up!

It was an amazing event by Troika to showcase the six wonderful flagship cocktails created there and also take us on a gastronomical journey of different cuisines available there.
